Tofu is often criticised for being bland, boring, and tasteless. But in the world of conscious living, tofu is actually a beautiful metaphor for our own lives: it is a blank canvas. It completely absorbs whatever flavours, energy, and intentions you choose to give it. This rich, citrusy, and budget-friendly dish is the ultimate proof that with the right herbs and a little mindfulness, the simplest ingredients can be turned into something extraordinary.

Living 300 kilometres away from my family, discovering my independence, I baked my very first Key Lime Pie. It was one of my first major culinary successes, a sweet symbol of self-reliance and stepping into my own power. Ever since that chapter of my life, the lime and coconut duo has held a special, empowering place in my heart.

Ingredients

  • For the Tofu Base:
  • 1 block (14 oz / 400g) extra-firm tofu (drained and pressed well)
  • 1/2 teaspoon fine sea salt
  • Zest of half a lime (finely grated)
  • 1 tablespoon coconut oil or sunflower oil
  • For the Rich Coconut Lime Sauce:
  • 1 tablespoon coconut oil
  • 3 cloves of garlic, finely minced
  • 1 teaspoon fresh ginger, grated
  • 1 can (13.5 oz / 400ml) full-fat coconut milk
  • 1 teaspoon paprika powder & a pinch of cayenne pepper
  • Juice of 1 large organic lime (freshly squeezed)
  • A good pinch of salt to taste
  • Garnish: Fresh chopped cilantro or parsley, and red chilli flakes.

Directions

  1. Press the tofu for 20 minutes to remove excess water. Cut into neat cubes, then gently toss with the 1/2 teaspoon of salt and the finely grated lime zest. Let it sit for 5 minutes to absorb the flavours.
  2. Heat 1 tablespoon of oil in a non-stick skillet over medium-high heat. Pan-fry the tofu cubes until all sides are crispy and beautifully golden-brown. Remove from the pan and set aside.
  3. In the same pan, add another tablespoon of oil, minced garlic, and grated ginger. Sauté for 30 seconds until fragrant. Pour in the full-fat coconut milk, paprika, cayenne, and a pinch of salt. Whisk gently to combine the tomato paste into the milk. Bring to a gentle simmer and let it cook uncovered for 6-8 minutes until the sauce naturally reduces and thickens into a silky, coral-coloured cream. 
  4. Stir in the fresh lime juice. Return the crispy tofu cubes to the pan, coating them gently in the velvet sauce. Simmer for 2 more minutes. 
  5. Spoon hot over a bowl of jasmine rice or quinoa, and garnish generously with fresh cilantro (or parsley) and chilli flakes.
